Thanks, so well written. Growing up with Indian immigrant parents, we NEVER had meat at home (dal again?!). It was an occasional thing we had at restaurants (non Indian ones!) So becoming vegetarian in college was really nothing to me. But I still field a lot of questions about how all the fake meat is more unhealthy and unsustainable than real meat and how do I justify that? I don't! I agree! Do we have the occasional Field Roast sausage on the grill at a cookout? Yes. Do I give my kids veggie chicken nuggets because I can't think of anything else to make tonight? Yes. But if you're trying to be more health conscious and eco conscious and cost conscious, cooking at home and eating real food has to be the starting point.

I agree 1000%. I’ve been a healthy vegetarian for 50 years armed simply with knowledge of legume and veg nutrients. There are endless delicious fulfilling dishes to be made.
